A little newbie I recently created and I have called it Spiced Carrot Cake. It really has a bit of everything; banana, yoghurt, spices, olive oil. I am usually baking banana breads or chocolate cupcakes, so it was time to mix it up – it worked a treat! You need these now:-) The perfect healthy little snack for you. Loaded with protein, fibre and good fats. After workout snack or morning/ afternoon tea. And super easy to make. Ingredients: Approx 12-13 Medjool dates (remove seeds) 1 cup cashew nuts 2 tblsp Pepitas 3 tblsp Protein powder (I love NutraOrganics) 1 tblsp Mesquite powder A good crack of Himalayan salt Desiccated coconut to roll in Method: Place cashews in food processor and blitz till they start to break down a little Add dates, pepitas, protein powder, vanilla, mesquite + salt Blitz until the mixture sticks together, if it seems …
